Ask a Capetonian how to spend a sunny Saturday and the answer often points inland, to the valleys around Stellenbosch, Paarl and Franschhoek. They’re usually sold under one glossy label – oak barrels and a tasting flight before lunch – and many visitors ride the wine tram, whisked to the next estate before the last sip settles.

Winemakers talk of terroir – how soil and slope and weather end up in the glass – and these valleys hold more than any tasting note can. Khoisan herders grazed them long before the first land grants, and for over a century the vines were worked by enslaved people brought from as far as Indonesia.
