Gualdim Pais rode home from the Second Crusade in 1160 and, instead of resting, built a castle on a hill above the Nabão River. The town that grew beneath it has been living in the Templars' shadow – and trading on their legend – ever since.

Tomar wears its history lightly for a place this layered. The Convent of Christ crowns the hilltop, its famous Manueline window encrusted with maritime rope and coral as if the Age of Discovery itself had calcified into stone. Below, in the old Jewish Quarter, Portugal's oldest synagogue stood hidden for centuries before its rediscovery. And every four years the Festa dos Tabuleiros fills the streets with processions of women balancing towers of bread on their heads – a tradition nobody can quite explain, which is part of why it endures.
