KAIXO–that’s HELLO in Basque!
I'm Gregory, a professional chef, culinary guide, and artisanal winemaker who has been living, eating, and drinking in San Sebastián for over fifteen years. I'm originally from California, trained at Le Cordon Bleu Paris on a James Beard Foundation Scholarship, and spent years working on organic farms across France and Spain before landing in the Basque Country. I never left.
Before moving here, I worked as a chef for celebrity clients, produced a cooking show for the Discovery Channel, and worked as a wine industry rep. San Sebastián cured me of all that. The food, the culture, the history, cuisine and language, it was unlike anything I'd experienced anywhere in the world.
I founded Basque Bites to share this place the way locals actually experience it: bar to bar, bite by bite, glass by glass. I've since guided thousands of visitors through the Old Town, the markets and cider houses and txakoli wineries. I study Euskara, the Basque language, which means I have deep relationships with the fishmongers, chefs and grandmothers who make this culture tick.
