8. White Tanks, White Wine
NARRATOR: There are some big, white tanks in front of you.
When we left the white wine, it had just been pressed into juice. Boela compared it to freshly squeezed orange juice, and if you’ve ever squeezed your own and left it in the fridge, you’ll know that the pulp rises to the top, leaving clear juice below.
That’s exactly what happens in these tanks. The white jackets are filled with ice cold water, chilling the juice while it settles. Once it has, these tanks are emptied out from outlets positioned at their base, into the large silver tanks to your right, to begin fermentation.
After two or three weeks in the stainless steel tanks, juice has become wine. At that point, it’s either matured in the tanks or in barrels for up to 10 months, before it’s ready to be bottled.
